Asparagus, basil, cherry tomato, mushroom and feta cheese frittata

Frittata is a fancy name for an omelette.
Great for breakfast, brunch or lunch.
Ingredients
- One cal spray oil
- 3 eggs
- 3 egg whites
- A little salt and pepper
- 10 cherry tomatoes
- 80g feta cheese
- 6 basil leaves, chopped
- 6-8 pieces asparagus
- 6 button mushrooms, finely sliced
Instructions
- Add a few sprays of the one cal spray an omelette or frying pan and heat over a medium heat.
- Add the asparagus and gently fry for 2 minutes, then add the mushrooms and fry for a further 3 minutes
- Beat together the whole eggs and egg whites. Season with some salt and pepper.
- Add the eggs to the pan and gently stir until the bottom starts to set.
- Cook for 6-8 minutes then sprinkle over the basil, tomatoes and feta cheese.
- Place under a hot grill and cook until the eggs are fully set.
